Die vorliegende Sohrift soIl in erster Lillie einen
Gesamtiiberbliok iiber das ermoglichen, was iiber die im Kriege
verwendeten und zur Verwend ung empfohlenen Brote, Brotersatz-und
Streckmittel in Erfahrung gebracht und ermittelt worden ist und was
wir daraus gelernt ha.ben. Ausgehend von eigenen Untersuchungen
iiber Kriegsbrote, die in den Jahren 1915, 1916 und 1917
ausgefiihrt worden sind, kniipft die Bearbeitung auch an die von
anderen Seiten angestellten Versuche an und fiihrt auBerdem das
Material vor Augen, was einer exakten Priifung bisher noah nicht
zuganglich gemacht wurde. Urn jedoch die Stellung der Kriegsbrote
genauer charakterisieren zu Mnnen, erforderte die 'Darstellung
andererseits auch ein Eingehen auf die alteren Brotuntersuchungen
und einen Vergleich mit ihnen, da sie die Basis dar stellen, auf
der sich die Beurteilung der Kriegsbrote aufbaut. 1m wesentlichen
handelt es sich bei unseren Betrachtungen um die er
nithrungsphysiologischen Gesichtspunkte. Es ist aber auch der Her
stellung, Beschaffenheit undBrauchbarkeit der Brote ein weiter
Ra.um gewidmet worden, ebenso wieFragen 6konomischer Natur und die
gesetzlichen Bestimm ungen Platz gefunden haben."
