written by expert Marine Hospitality galley trainer, Malcolm
Alder-Smith. Known to his friends in the yachting world as Malcy,
he has been training newbies to work as interior crew for over five
years. Classically trained as a chef by French, Italian and Swiss
master chefs, Malcy shares his galley secrets with UKSA Marine
Hospitality students in the kitchens of The Isle of Wight College.
Malcy's passion is to feel he has made a difference to people's
