This volume analyzes whether China's thirty years of legal reform have taken root in Chinese society by examining how ordinary citizens are using the legal system in contemporary China. It is an interdisciplinary look at law in action and at legal institutions from the bottom up, that is, beginning with those at the ground level that are using and working in the legal system. It explores the emergent Chinese conception of justice one that seeks to balance Chinese tradition, socialist legacies, and the needs of the global market. Given the political dimension of dispute resolution in creating, settling, and changing social norms, this volume contributes to a greater understanding of political and social change in China today and of the process of legal reform generally.

The Chinese government has legislated some of the most protective workplace laws in the world and opened up the judicial system to adjudicate workplace conflict, emboldening China's workers to use these laws. This book examines these patterns of legal mobilization, showing which workers are likely to avail themselves of these new protections and find them effective. Gallagher finds that workers with high levels of education are far more likely to claim these new rights and be satisfied with the results. However, many others, left disappointed with the large gap between law on the books and law in reality, reject the courtroom for the streets. Using workers' narratives, surveys, and case studies of protests, Gallagher argues that China's half-hearted attempt at rule of law construction undermines the stability of authoritarian rule. New workplace rights fuel workers' rising expectations, but a dysfunctional legal system drives many workers to more extreme options, including strikes, demonstrations and violence.

Coeliac disease (CD) and other allergic reactions/intolerances to gluten are on the rise, largely due to improved diagnostic procedures and changes in eating habits. The worldwide incidence of coeliac disease has been predicted to increase by a factor of ten over the next number of years, and this has resulted in a growing market for high quality gluten-free cereal products. However, the removal of gluten presents major problems for bakers. Currently, many gluten-free products on the market are of low quality and short shelf life, exhibiting poor mouthfeel and flavour. This challenge to the cereal technologist and baker alike has led to the search for alternatives to gluten in the manufacture of gluten-free bakery products.

This volume provides an overview for the food industry of issues related to the increasing prevalence of coeliac disease and gluten intolerance. The properties of gluten are discussed in relation to its classification and important functional characteristics, and the nutritional value of gluten-free products is also addressed. The book examines the diversity of ingredients that can be used to replace gluten and how the ingredient combinations and subsequent rheological and manufacturing properties of a range of gluten-free products, e.g. doughs, breads, biscuits and beer may be manipulated. Recommendations are given regarding the most suitable ingredients for different gluten-free products. A new spectroscopic technique applicable to the detection of ultra-weak and for- bidden molecular transitions is presented. The method is based on o -axis integrated- cavity-output spectroscopy (ICOS) and has been applied to the detection of singlet (a1 g) oxygen in the (1,0) band of the electric-quadrupole allowed Noxon system (b1 + g a1 g) of oxygen. The details of the method as well as spectroscopic data con rming the absolute line positions of twenty-one lines in the (1,0) band of the b1 + g a1 g have been completed to within 0:004 cm 1. A Boltzmann analysis veri ed previously calculated and unproven integrated cross sections for each of the lines. Ten lines were also pressure broadened from 25 Torr to 100 Torr, and pres- sure broadening coe cients were determined from -p = 3:61 10 6 cm 1=torr to 5:81 10 6 cm 1=torr. These coe cients illustrate that rotationally-inelastic colli- sions are the dominant mechanism in molecular pressure broadening. The singlet oxy- gen was generated in a microwave plasma and the afterglow passed through an o -axis ICOS measurement system consisting of an 82 cm long, high- nesse (F 248000) optical cavity. The mirror re-ectivity, R, was determined by performing a cavity- ringdown measurement and observing ringdown times of 220 s in a range from 1494 nm to 1512 nm.

Beta cells or ss-cells, are a type of cell in the pancreas in areas called the islets of Langerhans. They make up 65-80% of the cells in the islets. Pancreatic B-cell is the only cell type that produces insulin to regulate glucose metabolism in the body. The insufficiency of insulin-producing B-cells results in dysregulation of blood glucose control, termed as type 1 diabetes. In the thirty years since the opening of China's economy, China's economic growth has been nothing short of phenomenal. At the same time, however, its employment relations system has undergone a gradual but fundamental transformation from stable and permanent employment with good benefits (often called the iron rice bowl), to a system characterized by highly precarious employment with no benefits for about 40 percent of the population. Similar transitions have occurred in other countries, such as Korea, although perhaps not at such a rapid pace as in China. This shift echoes the move from "breadwinning" careers to contingent employment in the postindustrial United States.

Usually viewed as the premier apologist for laissez-faire capitalism, Smith is seen in this new interpretation within the context of an earlier tradition that condemned the British aristocracy for relinquishing its moral obligation to promote the public good in favor of an unceasing pursuit of private gain.
