Lange Wege von und zur Arbeits- statte sind zur Regel geworden, vor allem in GroBstadten und bei Betrieben mit vielen Beschaftigten. Ein Mittagessen in der Familie ist daher fUr viele unmoglich. Man sucht Ersatz durch Mitnahme von Butterbroten oder be- hilft sich mit dem "Henkelmann". Einsichtige BetriebsfUhrer aber schafi"en in ihren Betrieben Kantinen oder Werkskuchen, also Einrichtungen fur eine Gemeinschaftsverpflegung. In der Bundesrepublik Deutschland be- tragt die Zahl derer, die ganz oder teilweise im Rahmen einer Gemeinschafts- verpflegung versorgt werden, 15 bis 16 Millionen. Von diesen nehmen etwa 70 v. H. an Betriebs- oder Werksverpflegung teil (78). Diese Tatsache unterstreicht das Gewicht, das der Gemeinschaftsverpflegung zukommt. Dber die Bedeutung, die eine richtige Ernahrung fur Gesundheit und Leistungsfahigkeit hat, bestehen bei Einsichtigen keine Zweifel. Es genugt dabei nicht, daB die Kost nur gerade ausreichend ist, daB sie nur eben den Bedarf an allen wichtigen Nahrstofi"en deckt; denn dann hatte der Korper keine Reserven und wiirde leicht auf kleine Dberbelastungen mit Storun- gen von Gesundheit und Leistungsfahigkeit reagieren. Die Ernahrung muB vielmehr "richtig" und "vollwertig" sein. Aber daruber, was man unter einer "richtigen" und "vollwertigen" Ernahrung versteht, wie man auch bei Vor- und Zubereitung den Nahrwert moglichst weitgehend erhalten oder ihn durch bestimmte MaBnahmen sogar verbessern kann, wird heute mehr denn je diskutiert(7 5).
