Un factor relacionado con el problema que supone en los vinos las paradas de fermentacion es la presencia de residuos de productos fitosanitarios en las uvas vendimiadas y, por ello, en el mosto a fermentar. En este trabajo, se ha desarrollado metodos analiticos para la determinacion de cuatro fungicidas (diclofluanida, metalaxil, penconazol y pirimetanil) en uvas, en mosto y en el vino elaborado. Ademas se ha estudiado la influencia de la aplicacion del compuesto pirimetanil, muy utilizado en DOCa Rioja, tanto en el campo como en la fermentacion y en las caracteristicas enologicas y sensoriales del vino elaborado. Finalmente se ha estudiado el efecto del regulador de crecimiento prohexadiona de calcio en su aplicacion al Tempranillo, estudio pionero en Espana y la Union Europea. Pirimetanil no afecta de manera sistematica a los parametros enologicos y no modifica la evolucion de las fermentaciones alcoholica y malolactica, ni las caracteristicas organolepticas de los vinos. La aplicacion de prohexadiona de calcio en prefloracion aumenta la concentracion de compuestos responsables del color, aroma y sabor, modificando de forma positiva las caracteristicas sensoriales de los vinos."
