It focuses on historical actors in territories that were not directly involved in the traffic inAfricans but linked in various ways with the transatlantic slave business, the plantation economies that it fed and the consequences of its abolition. The volume unearths material entanglements of the Continental and Atlantic economies and also proposes a new agenda for the historical study of the relationship between business and morality. Contributors from the US, Britain and continental Europe examine the ways in which the slave economy touched on individual lives and economic developments in German-speaking Europe, Switzerland, Denmark and Italy. They reveal how these 'hinterlands' served as suppliers of investment, labour and trade goods for the slave trade and of materials for the plantation economies, and how involvement in trade networks contributed in turn to key economic developments in the 'hinterlands'. The chapters range in time from the first, short-lived attempt at establishing a German slave-trading operation in the 1680s to the involvement of textile manufacturers in transatlantic trade in the first quarter of the nineteenth century. A key theme of the volume is the question of conscience, or awareness of being morally implicated in an immoral enterprise. Evidence for subjective understandings of the moral challenge of slavery is found in individual actions and statements and also in post-abolition colonisation and missionary projects. In such cases maloc clusion of the tceth is usual; this is corrected by intermaxillary fixation of the mo bilized bony structures which also reestablishes adequate relationships between the dento-alveolar processes of the upper and lower jaws. This brings us to the subject of surgical orthodontics, a field that is just beginning to expand; its development should bring about closer collaboration between surgeon and orthodontist, resulting in rapid and efficient improvement of malocclusion. The absence of vibration characteristic of the air-driven turbine, in contrast to the mechanically driven drill, allows the surgeon to carry out delicate and precise surgical procedures with less fatigue to himself."

Protein functionality is big business in the food industry, both academic and commercial. This reflects the fascination of protein chemistry and the commercial value of proteins in giving texture and substance to foods. My first encounter with the subject came about through an interest in assessing the extent of thermal damage in spray-dried proteins. A change in functional properties seemed a useful guide to the thermal damage. I found the literature replete with methods (and theory) and so did what everybody else seemed to do - I devised my own methods which were slight variations on the general theme. However, being an analyst at heart I thought there must be a systematic approach to the various tests available. This book is an attempt to assess the practice of protein functionality testing, keeping theory to a minimum, followed by a suggested 'standard' method or protocol to follow. Each chapter is devoted to a single functional property and the reader will see that attempts to 'standardise' them have had varied success, perhaps reflecting the complexity of the mechanisms at work. As mentioned above theory has been kept to a minimum but hopefully it supports the practical methodology described. This dictionary provides a convenient personal reference source, intended to complement more encyclopaedic works.
