This book has been written by two experts in ventilation and indoor
air quality with vast experience in the field of kitchen
ventilation in both Asia and Europe. The authors share their
extensive knowledge of the subject and present the results of their
research programs as well those of other researchers. Discussing
advanced theories of and design approaches for kitchen ventilation,
it is a useful reference resource for a wide range of readers,
including HVAC researchers, designers and architects.
The fully revised and restructured two-volume 2nd edition of the
Industrial Ventilation Design Guidebook develops a systematic
approach to the engineering design of industrial ventilation
systems and provides engineers guidance on how to implement this
state-of-the-art ventilation technology on a global basis. Volume
1: Fundamentals features the latest research technology in the
broad field of ventilation for contaminant control including
extensive updates of the foundational chapters from the previous
edition. With major contributions by experts from Asia, Europe and
North America in the global industrial ventilation field, this new
edition is a valuable reference for consulting engineers working in
the design of air pollution and sustainability for their industrial
clients (processing and manufacturing), as well as mechanical,
process and plant engineers looking for design methodologies and
advice on sensors and control algorithms for specific industrial
operations so they can meet challenging targets in the low carbon
economy.

Concerns over the indoor conditions have increased during recent
years as a result of knowledge about indoor environmental quality
on health, comfort and productivity of the workforce. The
efficiency of the exhaust system is especially emphasised with a
ventilated ceiling system where the exhaust is located at ceiling
level. The removal efficiency of the total system must be
guaranteed and the spread of impurities throughout the kitchen
should be prevented. In the normal design practice, empirical
knowledge of the existing installations together with rough heat
load based calculation has been used for airflow rate
determination. This book provides a contribution to the
understanding of the thermal plumes of kitchen appliances and the
interaction between supply air systems. This book gives improved
basis for designing ventilated ceiling systems. Concepts to improve
the capture and containment efficiency are also analyzed. The book
is especially useful to professionals in commercial kitchen
ventilation and food service fields, or anyone else who may be
considering utilizing high performance ventilation in an energy
efficient manner.
