The Accomplisht Cook was first published in 1660 and this is a facsimile of the 1685 edition. Robert May was cook to the aristocracy of Royalist England; born in the year of the Armada; trained by his own father, then by powerful patrons in Paris; before apprenticeship in London with the cook to the Star Chamber. In the course of a long life, working almost exclusively for fellow Catholics and Royalists, he absorbed all the most fashionable tendencies at large in the kitchens of England. 'By its sheer size and comprehensive scope Robert May's book eclipsed its predecessors,' writes Alan Davidson in his foreword. Here is the most complete portrait of English cooking as it was when Charles II was restored to the throne, as well as before 'the unhappy and cruel disturbances' of the Civil War, in 'those golden days of peace and hospitality,' as the author puts it, 'when you enjoyed your own.' This volume aims to be useful as an appraisal of the state of the art by a mixed collection of insiders and outsiders. Most interestingly, I think, it aims (especially in the four group reports) to identify some of the major areas of unresolved controversy and some of the major questions yet unanswered. I see the book as essentially a tentative statement - often by several dissonant voices - about directions in which we may be heading; the book is emphatically not a canonical utterance on how to do things. It is intended to stimulate, not to codify. Following the usual Dahlem Workshop format, the discussions were organized under four themes. Although crisp demarcation is not possible, the first two themes broadly deal with biological aspects of the dynamics of single populations and the dynamics of systems with many species. The later two themes take up questions of management under uncertainty and multispecies management. In all this, the word "fish" is interpreted broadly to include such taxonomically varied beasts as whales, shrimp, crabs, shellfish, and squid, along with fish in a strictly zoological sense.

Science and Government is a gripping account of one of the great scientific rivalries of the twentieth century. The antagonists are Sir Henry Tizard, a chemist from Imperial College, and Frederick Lindemann (Lord Cherwell), a physicist from the University of Oxford. Tizard, an adviser to a Labor government, believed the air war against Nazi Germany would be won by investing in the new science of radar. Lindemann favored bombing the homes of German citizens. When the Conservatives returned, Lindemann, who was Winston Churchill's personal adviser, became untouchable. Snow's 1959 "Two Cultures" Rede Lecture propelled him to worldwide fame. Science and Government, originally the 1960 Godkin Lectures at Harvard, has been largely forgotten. Today the space occupied by scientists and politicians is much more contested than it was in Snow's time, but there remains no better guide to it than Snow's dramatic narrative. C. P.
