The authors explain the changes in the thermophysical and thermomechanical properties of polymer composites under elevated temperatures and fire conditions. Using microscale physical and chemical concepts they allow researchers to find reliable solutions to their engineering needs on the macroscale. In a unique combination of experimental results and quantitative models, a framework is developed to realistically predict the behavior of a variety of polymer composite materials over a wide range of thermal and mechanical loads. In addition, the authors treat extreme fire scenarios up to more than 1000?C for two hours, presenting heat-protection methods to improve the fire resistance of composite materials and full-scale structural members, and discuss their performance after fire exposure. Thanks to the microscopic approach, the developed models are valid for a variety of polymer composites and structural members, making this work applicable to a wide audience, including materials scientists, polymer chemists, engineering scientists in industry, civil engineers, mechanical engineers, and those working in the industry of civil infrastructure.
Fatigue has long been recognized as a mechanism that can provoke catastrophic material failure in structural applications and researchers are now turning to the development of prediction tools in order to reduce the cost of determining design criteria for any new material. Fatigue of Fiber-reinforced Composites explains these highly scientific subjects in a simple yet thorough way. Fatigue behavior of fiber-reinforced composite materials and structural components is described through the presentation of numerous experimental results. Many examples help the reader to visualize the failure modes of laminated composite materials and structural adhesively bonded joints. Theoretical models, based on these experimental data, are demonstrated and their capacity for fatigue life modeling and prediction is thoroughly assessed. Fatigue of Fiber-reinforced Composites gives the reader the opportunity to learn about methods for modeling the fatigue behavior of fiber-reinforced composites, about statistical analysis of experimental data, and about theories for life prediction under loading patterns that produce multiaxial fatigue stress states. The authors combine these theories to establish a complete design process that is able to predict fatigue life of fiber-reinforced composites under multiaxial, variable amplitude stress states. A classic design methodology is presented for demonstration and theoretical predictions are compared to experimental data from typical material systems used in the wind turbine rotor blade industry. Fatigue of Fiber-reinforced Composites also presents novel computational methods for modeling fatigue behavior of composite materials, such as artificial neural networks and genetic programming, as a promising alternative to the conventional methods. It is an ideal source of information for researchers and graduate students in mechanical engineering, civil engineering and materials science.
IACP Award Winner 2019 marks the twenty-fifth anniversary of the acclaimed French Laundry restaurant in the Napa Valley--"the most exciting place to eat in the United States" (The New York Times). The most transformative cookbook of the century celebrates this milestone by showcasing the genius of chef/proprietor Thomas Keller himself. Keller is a wizard, a purist, a man obsessed with getting it right. And this, his first cookbook, is every bit as satisfying as a French Laundry meal itself: a series of small, impeccable, highly refined, intensely focused courses. Most dazzling is how simple Keller's methods are: squeegeeing the moisture from the skin on fish so it sautees beautifully; poaching eggs in a deep pot of water for perfect shape; the initial steeping in the shell that makes cooking raw lobster out of the shell a cinch; using vinegar as a flavor enhancer; the repeated washing of bones for stock for the cleanest, clearest tastes. From innovative soup techniques, to the proper way to cook green vegetables, to secrets of great fish cookery, to the creation of breathtaking desserts; from beurre monte to foie gras au torchon, to a wild and thoroughly unexpected take on coffee and doughnuts, The French Laundry Cookbook captures, through recipes, essays, profiles, and extraordinary photography, one of America's great restaurants, its great chef, and the food that makes both unique. One hundred and fifty superlative recipes are exact recipes from the French Laundry kitchen--no shortcuts have been taken, no critical steps ignored, all have been thoroughly tested in home kitchens. If you can't get to the French Laundry, you can now re-create at home the very experience Wine Spectator described as "as close to dining perfection as it gets."
"Under Pressure," writes Harold McGee in his introduction to this,
the first book written in English on cooking sous vide, "introduces
cooks to one of the most important culinary innovations of modern
times."
Thomas Keller, chef/proprieter of Napa Valley's French Laundry, is
passionate about bistro cooking. He believes fervently that the
real art of cooking lies in elevating to excellence the simplest
ingredients; that bistro cooking embodies at once a culinary ethos
of generosity, economy, and simplicity; that the techniques at its
foundation are profound, and the recipes at its heart have a
powerful ability to nourish and please.
Edible ingredients are transformed into whimsical happy faces by the expert hand of chef Rudi Sodamin. In this inventive volume, he uses both everyday and luxury foods grapes, apples, chile peppers, salmon roe, caviar, and black truffles, among many other items to craft more than 150 funny faces that are sure to inspire both laughter and wonder. Like a modern Arcimboldo, Sodamin has carefully assembled these images using nothing but food items. Each face is a unique piece of art: vibrant in colour, rich in texture, and constructed in an incredibly imaginative way. This book has a universal appeal that crosses all ages, languages, cultures and food groups. Food Faces makes a great gift for anyone who needs a little lift.
Named a Best Book of 2020 by Publisher's Weekly Named a Best Cookbook of 2020 by Amazon and Barnes & Noble “Every elegant page projects Keller’s high standard of ‘perfect culinary execution’. . . . This superb work is as much philosophical treatise as gorgeous cookbook.”—Publishers Weekly, STARRED REVIEW Bound by a common philosophy, linked by live video, staffed by a cadre of inventive and skilled chefs, the kitchens of Thomas Keller’s celebrated restaurants—The French Laundry in Yountville, California, and per se, in New York City—are in a relationship unique in the world of fine dining. Ideas bounce back and forth in a dance of creativity, knowledge, innovation, and excellence. It’s a relationship that’s the very embodiment of collaboration, and of the whole being greater than the sum of its parts. And all of it is captured in The French Laundry, Per Se, with meticulously detailed recipes for 70 beloved dishes, including Smoked Sturgeon Rillettes on an Everything Bagel, “The Whole Bird,” Tomato Consommé, Celery Root Pastrami, Steak and Potatoes, Peaches ’n’ Cream. Just reading these recipes is a master class in the state of the art of cooking today. We learn to use a dehydrator to intensify the flavor and texture of fruits and vegetables. To make the crunchiest coating with a cornstarch–egg white paste and potato flakes. To limit waste in the kitchen by fermenting vegetable trimmings for sauces with an unexpected depth of flavor. And that essential Keller trait, to take a classic and reinvent it: like the French onion soup, with a mushroom essence stock and garnish of braised beef cheeks and Comté mousse, or a classic crème brûlée reimagined as a rich, creamy ice cream with a crispy sugar tuile to mimic the caramelized coating. Throughout, there are 40 recipes for the basics to elevate our home cooking. Some are old standbys, like the best versions of beurre manié and béchamel, others more unusual, including a ramen broth (aka the Super Stock) and a Blue-Ribbon Pickle. And with its notes on technique, stories about farmers and purveyors, and revelatory essays from Thomas Keller—“The Lessons of a Dishwasher,” “Inspiration Versus Influence,” “Patience and Persistence”—The French Laundry, Per Se will change how young chefs, determined home cooks, and dedicated food lovers understand and approach their cooking.
Thomas Keller shares family-style recipes that you can make any or
every day. "
"Bouchon Bakery" is co-authored by Sebastien Rouxel, whose skills and craftsmanship make every page a new lesson: it could be a subtlety that ensures a professional finish, or a flash of ingenuity that reveals a whole new way to heighten flavour and enhance texture. The deft twists, perfectly written recipes, and dazzling photographs make perfection inevitable, whether you're making a doughnut or an eclair, a croissant or a cream puff. The Candy and Confections chapter offers unimaginable treats: peppermint patties with creamy centres, nut-laden nougat, fruit jellies, caramel popcorn, Flavoured marshmallows, and bonbons, as well as holiday delights. Each recipe provides weights for ingredients, as well as volume measures, and directions for standard and convections ovens. The recipes here run the gamut from the very simple to the complex, but all are readily doable with many doahead steps and brilliant guidance from three exceptional chefs: Thomas Keller, Sebastien Rouxel, and Matthew McDonald.

This concise volume provides a widely accessible introduction to OFDM and MC-CDMA. Based on the authors' experience in researching OFDM in the context of various applications, it systematically converts the lessons of Shannon's information theory into practical wireless system design examples. Comprehensive coverage of OFDM, MIMO-OFDM and MC-CDMA is presented, incorporating radically new research-oriented principles. A further strength of this primer is that it considers the ambitious aim of achieving near-maximum-likelihood multi-user MIMO-OFDM performance at a modest complexity, proposing an advanced extension of the Complex Sphere Detector (CSD). This technique allows the system to support a higher number of OFDM/MC-CDMA users than the number of antennas even in the case of high-throughput QAM schemes. The design and performance of OFDM modems are highlighted, covering both Gaussian and wideband fading channels, frequency domain synchronization as well as adaptive single- and multi-user OFDM Offers a comparative study of OFDM and MC-CDMA, discussing spreading sequences, adaptive modulation and the attainable performance in synchronous environments Contains an advanced section on genetic algorithm aided joint multi-user channel estimation techniques for multi-user SDMA-OFDM Introduces an avant-garde design principle, which aims for directly minimizing the bit error ratio (BER) at the output of the multi-user OFDM system As an introductory treatment of the complex subject of OFDM, this primer text will be attractive to a wide readership, including postgraduate students, systems and development engineers, as well as communications managers and practitioner.
