Many novel technologies have been proposed in the attempt to
improve existing food processing methods. Among emerging nonthermal
technologies, high intensity pulsed electric fields (PEF) is
appealing due to its short treatment times and reduced heating
effects. This book presents information accumulated on PEF during
the last 15 years by experienced microbiologists, biochemists, food

than counterposing interests and ethics, trying to find 'hidden
agendas' or emphasizing the double-standards at play in ethical

In den Diskussionen um eine neue Weltordnung, die Konsequenzen der
wirt schaftlichen Globalisierung und neue soziale Konfliktfelder
gewinnt der Streit um biologische Ressourcen zunehmend an
Bedeutung. Diese Ressour cen sind von beachtlichem Wert vor allem
fur diejenigen Industriezweige, die neuerdings unter dem Stichwort
"Li fe Sciences" und mit den Mitteln der modernen Biotechnologien
die Bereiche Gesundheit und Ernahrung als zen trale
Investitionsfelder der Zukunft entdeckt haben. Einrichtungen wie
die Organisation fur wirtschaftliche Zusammenarbeit und Entwicklung
(OECD) oder das Umweltprogramm der Vereinten Nationen (UNEP)
