Combining the disciplines of biological, physical and chemical science, microbial forensics has a rapidly rising profile in a world increasingly troubled by the threat of 'biocrime' and 'bioterrorism'. This valuable resource is a major addition to a body of literature reckoned to lack sufficient breadth. It presents a variety of phenotypic and trace signature methodologies associated with cultured microorganisms that, despite being genetically identical, may be characterized by differing cultural environments. One of the central challenges faced by those working in this field is the sheer diversity of potentially harmful agents, which in themselves total more than 1000 viruses, bacteria, fungi and protozoan parasites. Their numerous additional variants render the process of 'fingerprinting' biological agents notoriously difficult, especially when the limitations of genetic analysis are factored in. Bioactive compounds in food, known for their positive health effects, can be lost during handling after harvest, processing and storage. While most foods are exposed to processing to increase shelf life and edibility and to ensure microbial safety, conventional processing methods may have disadvantages, such as decreasing the nutritional quality of foods, long processing times, high temperature and high energy uses. For these reasons, novel non-thermal food processing technologies (including HPP, ultrasound) and novel thermal food processing technologies (including microwave/Ohmic heating) have become widespread. This book provides a critical evaluation of the effects of conventional, novel non-thermal, and thermal food processing techniques on the retention and bioaccessibility of bioactive compounds in food materials. Within these three categories, many different processing methods are included: fermentation/germination, drying, extrusion, and modified atmosphere packaging, as well as novel technologies, such as microwave heating, ultrasound, high pressure processing, ozonation, and membrane separation processes.

Characterization of both anthropogenic and natural sources of perchlorate, including isotopic analysis to distinguish between differing sources, precedes discussions of the advantages, performance, and relative costs of applying a range of remedial technologies. Active, semi-passive, and passive in situ bioremediation are fully described and compared with emphasis on field application. Cost information for each technology, using case studies and analyses of several template sites, covers capital costs, as well as costs for laboratory testing, pilot-scale demonstration, design, system operation, monitoring and maintenance during operations, and demolition and restoration after remediation. This book details the widely accepted hypothesis that the majority of bacteria in virtually all ecosystems grow in matrix-enclosed biofilms. The author, who first proposed this biofilm hypothesis, uses direct evidence from microscopy and from molecular techniques, arguing cogently for moving beyond conventional culture methods that dominated microbiology in the last century. In recent years a number of scholars have analyzed the management of BSE, also known as 'mad cow disease'. The BSE crisis is regarded by many as an example of the failure of officials and politicians to handle risk situations. Yet, BSE is also characterized by a unique trait, that is, the infectious agent that causes it. Thus far, no one has paid attention to the fact that BSE and other transmissible spongiform encephalopathy's (TSEs) are allegedly caused by a novel agent - a prion - distinct from all other known infectious agents such as bacteria and viruses. The prion hypothesis was introduced by the American scientist Stanley Prusiner in 1982. It immediately created a controversy among scientists and is still rejected by some. Yet, despite this lack of consensus in the scientific community, Prusiner was awarded the Nobel Prize for medicine in 1997. This book analyzes the introduction, reception, development and consequences of the prion hypothesis. It shows that BSE is a unique case not only in virtue of its political mismanagement but also because its infectious agent has created a form of revolution in biology.
Research on the interactions of plants and phytopathogenic fungi has become one of the most interesting and rapidly moving fields in the plant sciences, the findings of which have contributed tremendously to the development of new strategies of plant protection.
