This book attempts to explain the scientific basis for UHT sterilization and aseptic filling, as well as describe the processes and equipment used. I have tried to avoid producing merely a catalogue of sterilizers and aseptic fillers. Instead I have attempted to explain the principles on which the different types of plant operate, and discuss the factors which influence performance, so that information given by manufac turers may be assessed by readers in relation to their own processing requirements. Statements are generally supported by references. Where no re ference is given, personal experience or my interpretation of the work of others is my justification. Although the book deals mainly with milk and milk products, I hope that the information it contains will be useful to those dealing with other products, since the principles of processing are in general the same. The book is based on more than 30 years' involvement with research into UHT processing and aseptic filling. During this time I have been fortunate to work with and to talk to many people from whom I have learned a great deal. I benefited from conta.cts with Dr T. R. Ashton (England) and Professor H. Hostettler. (Switzerland), who were pioneers in the commercial development of UHT milk. More recently I have been privileged to know and work with research workers in many countries having a common interest in UHT processing. Of these, I should mention particularly Professors E. L. In February 2001, Foot and Mouth Disease arrived in Cumbria. At its peak Cumbria was the worst affected county in Britain with a staggering 41 per cent of all cases. For the local community, the environmental and social consequences were to prove devastating. As a local resident, leading UK photographer John Darwell found himself surrounded by the effects of the disease. Over the next twelve months, he committed himself to recording what was taking place. Despite government reports to the contrary, the Cumbrian countryside became largely a 'no-go area', whilst on the farms thousands of animals were destroyed, their bodies burnt on the now notorious pyres. The ultimate clean-up of the infected farms led to extraordinary lengths being taken to eradicate the virus. "Dark Days" represents, perhaps, the most complete record of this time and provides a powerful and emotive insight into one of the most dramatic and destructive periods in British farming history. The global drive towards sustainability and improved animal health means there is a greater need for development of novel functional ingredients for the feed industry. As the requirements for protein for livestock feed and human consumption grows, the use of insect products as animal feed has gained increasing attention. Animal welfare is attracting increasing interest worldwide, especially in developed countries where the knowledge and resources are available to (at least potentially) provide better management systems for farm animals, as well as companion, zoo and laboratory animals. The key requirements for adequate food, water, a suitable environment, appropriate companionship and good health are important for animals kept for all of these purposes. There has been increased attention given to farm animal welfare in many co- tries in recent years. This derives largely from the fact that the relentless pursuit of nancial reward and ef ciency, to satisfy market demands, has led to the devel- ment of intensive animal production systems that challenge the conscience of many consumers in those countries. In developing countries, human survival is still a daily uncertainty, so that p- vision for animal welfare has to be balanced against human needs. Animal welfare is usually a priority only if it supports the output of the animal, be it food, work, clothing, sport or companionship. In principle the welfare needs of both humans and animals can be provided for, in both developing and developed countries, if resources are properly husbanded. In reality, however, the inequitable division of the world's riches creates physical and psychological poverty for humans and a- mals alike in many parts of the world.

The welfare of the sheep has received less attention than the welfare of intensively husbanded animals.
