While community quality-of-life indicators are gaining much needed attention in both scholarly work and practice, their application in the areas of parks, recreation and tourism management are not as well known. The applicability of indicator systems for natural resource and natural resource area management within the parks and recreation arena is very high, including urban parks and recreation programs and their influence on quality of life. Tourism is also an area that needs much more work in terms of assessing impacts as well as developing indicators for gauging progress in the long term. All three areas are an integrated discipline and most programs throughout the developed world are housed co-jointly. There are several researchers across the globe who are conducting innovative work in these areas. The editors feel that a volume on the topic will spur additional interests as well as serve to lead the research efforts.

A number of recent books, magazines, and television programs have emerged that promise to take viewers inside the exciting world of professional chefs. While media suggest that the occupation is undergoing a transformation, one thing remains clear: being a chef is a decidedly male-dominated job. Over the past six years, the prestigious James Beard Foundation has presented 84 awards for excellence as a chef, but only 19 were given to women. Likewise, Food and Wine magazine has recognized the talent of 110 chefs on its annual "Best New Chef" list since 2000, and to date, only 16 women have been included. How is it that women - the gender most associated with cooking - have lagged behind men in this occupation? Taking the Heat examines how the world of professional chefs is gendered, what conditions have led to this gender segregation, and how women chefs feel about their work in relation to men. Tracing the historical evolution of the profession and analyzing over two thousand examples of chef profiles and restaurant reviews, as well as in-depth interviews with thirty-three women chefs, Deborah Harris and Patti Giuffre reveal a great irony between the present realities of the culinary profession and the traditional, cultural associations of cooking and gender. Since occupations filled with women are often culturally and economically devalued, male members exclude women to enhance the job's legitimacy. For women chefs, these professional obstacles and other challenges, such as how to balance work and family, ultimately push some of the women out of the career. Although female chefs may be outsiders in many professional kitchens, the participants in Taking the Heat recount advantages that women chefs offer their workplaces and strengths that Harris and Giuffre argue can help offer women chefs - and women in other male-dominated occupations - opportunities for greater representation within their fields.
Russia, the largest country in the world, has untapped tourism potential. Historic and cultural resources, natural attractions, and business opportunities attract a growing number of visitors to this fast-growing country. The book will appeal to a broad base of students, professors, and practitioners. It addresses tourism as a system, provides essentials of management and marketing, discusses tourism planning and impact management, and proposes strategies and recommendations to improve Russia as an international destination. It is also unique in its approach: it has been written by a group of collaborating authors as part of an EU-funded project that created links between tourism academics from Russia and the European Union. Each chapter was co-written by an international mix of contributors who have worked together on tourism and Russia for two years. Hardbound. This book is designed to give an overview and critical assessment of the developing field of tourism study in anthropology. It aims to engage the reader with questions that anthropologists have raised about tourist and the ways that they have dealt with them in their research. Basic research from three theoretical perspectives is reviewed and assessed: tourist as a form of development or acculturation, as a personal transition, and as a kind of social super structure. In later chapters, the applied side of the field is examined, including considerations of tourist policy and sustainable tourism development. Over the past four decades the wealthiest OECD economies-in Europe, North America, and Australasia- have faced massive structural change. Industrial sectors, which were once considered the economic backbone of these societies, have shrunk inexorably in terms of size and economic significance, while service sectors have taken over as the primary engines of output and employment expansion. The impact on labor markets has been profound: in many OECD countries more than three-quarters of employment is now in services, while industrial sectors, on average, account for less than one-fifth. This sectoral shift in the locus of economic activity has potentially radical implications for politics and society. However, these implications are only beginning to be understood. This path-breaking book is a systematic attempt to understand the distinct political economy of service societies. It examines how different types of socio-economic regimes manage the service transition, with a central focus on job creation and destruction and the changing characteristics of labor markets, and shows that the economic, distributional, and political outcomes with which it is associated vary across countries depending on their political-institutional structures.

This book makes a novel contribution to the sociolinguistics of globalization by examining the dynamics between language and social change in the tourism destination of West Street, Yangshuo, China. This new and timely book looks at the issue that Heritage in general, and in particular urban heritage in Asia, is at the centre of a perfect storm. Populations are increasing rapidly in cities as urbanization grows and there are ever larger numbers of tourists placing significant pressure on urban heritage resources. It does not ignore the fact however that many heritage sites were urban sites historically, with architecture and infrastructure all squeezed into a small space. This means the issues of managing large numbers of tourists in small spaces not designed for this use at Angkor/Bagan are really no different than Bangkok or Yangon. Effective service delivery requires a transition from high-volume, long-run operations to low-volume, short-run output. In conventional terms, inefficiency is inherent in such a shift.
