How to Make Coffee explores the scientific principles behind the art of coffee making, along with step-by-step instructions of all the major methods, and which beans, roast, and grind are best for them. This book also covers topics such as: The history of the bean Chemical composition Caffeine and decaf Milk Roasting and grinding Machines and gadgets . . . and many more Caffeine is the most widely consumed mind-altering molecule in the world; we cannot get enough of it. How is it that coffee has such a hold? Its all in the chemistry; the molecular structure of caffeine and the flavour-making phenols and fats that can be lured out from the bean by roasting, grinding and brewing. Making good coffee depends on understanding the science: why water has to be at a certain temperature, how roast affects taste, and what happens when you add cream. This book lays out the scientificprinciples for the coffee-loving non-scientist; stick to these and you will never drink an ordinary cup of joe again.

Good Old Fashioned School Dinners, will transport you back to those halcyon days of school canteens, evoking the smells, flavours, tastes and textures, of beef cobbler, spam fritters, chocolate concrete and jam roly-poly. If you remember lusting after a Chopper, a Space Hopper or even The Milky Bar Kid, then chances are you'll also have had school dinners like this. Steaming pies, sloppy mash and puddings drowning in custard evoke a plethora of memories, some good, others frankly awful - depending on what you had served up when you reached the front of the lunch queue. Good Old Fashioned School Dinners is replete with recipes to make over fifty dishes, including both traditional favourites and meals that were strictly school-canteen-only. They are all tried and tested, prised from the apron pockets of school cooks or otherwise recreated as authentically as possible. Cook yourself back to a golden age when tank tops were cool and lapels were so wide you could catch them on door frames. Fill your kitchen with glorious smells and fill the stomachs of loved ones with custard - you could even round up a few friends and have a `back-to-school' dinner party.

A fast-paced, gripping insider account of the entrepreneurs and renegades racing to bring lab-grown meat to the world.
The trillion-dollar meat industry is one of our greatest environmental hazards; it pollutes more than all the world's fossil-fuel-powered cars. Global animal agriculture is responsible for deforestation, soil erosion and more emissions than air travel, paper mills and coal mining combined. It also depends on the slaughter of more than 60 billion animals per year, a number that is only increasing as the global appetite for meat swells. The whole world seems to be sleepwalking into a food crisis. But a band of doctors, scientists, activists and entrepreneurs have been racing to end animal agriculture as we know it, hoping to fulfill a dream of creating meat without ever having to kill an animal. This is the story of a group of seven vegans quietly working to solve one the most pressing issues we face today, creating the biggest upheaval to the food business in decades along the way.
In Billion Dollar Burger, Chase Purdy explores the companies at the cutting edge of the nascent food technology sector, from polarizing activist-turned-tech CEO Josh Tetrick to lobbyists and regulators on both sides of the issue. Billion Dollar Burger follows the people fighting to upend our food system as they butt up against the entrenched interests fighting viciously to stop them. It will take readers on a truly global journey from Silicon Valley to China, by way of Israel and the UK.
The stakes are monumentally high: cell-cultured meat is the best hope for sustainable food production, a key to fighting climate change, a gold mine for the companies that make it happen and an existential threat for the farmers and meatpackers that make our meat today.
There are ingredients, and then there are Ingredients. An ingredient is what we're used to thinking about in the kitchen - things like tomatoes, tofu or thyme. An Ingredient is what those things are made of. There are millions of ingredients, but only eight Ingredients: Waters, Sugars, Carbs, Lipids, Proteins, Minerals, Gases and Heat. Ingredient isn't a book of recipes - instead, it's about learning to see beneath the surface of food, exposing the moving parts that cause every failure and every triumph in every kitchen. You can apply the mindset laid out in Ingredient to any recipe or technique, regardless of your skill level or how you like to cook. Home cooks will feel ready to take on any recipe, and restaurant cooks will feel prepared for anything that comes out of the fire. Beginners will have a lifeline if something goes wrong, and masters will improve dishes they've been cooking for years. Fans of old-school cuisine will understand classic preparations like never before and the innovation-minded will advance the art of cooking even further. Renowned culinary scientist Ali Bouzari illuminates the elemental world of food and unlocks the secrets of ingredients in a lively, engaging and accessible way that dramatically changes the way we look at our food.

For 25 years, the Burdon family have managed Jervaulx Abbey, one of the largest privately owned Cistercian abbeys in the UK. This book celebrates the wonderful cakes, bakes and chutneys they have become famous for in that time, all sold from the neighbouring Jervaulx Abbey Tearoom. From classic bakes such as their fruity tea bread to cakes with a modern twist such as their legendary red velvet cake, the loaves, tarts and tray bakes to emerge from the oven at Jervaulx have kept guests heartily fed for 25 years. Alongside these, they have also become famous for their range of relishes, jams and chutneys, which include a sumptuous Wensleydale beer and apple chutney, while their raspberry and almond cake was named Best Free-From Product at the Deliciously Yorkshire Awards in 2017. The tearoom is run by Ian Burdon and his wife Carol, and their two daughters Gayle and Anna, but it was Ian's father, Major Burdon, who bought the land and what remained of the twelfth century abbey as a place to return to his Yorkshire roots in 1971. The abbey's significant restoration project was managed by his sons, Rae and Ian, before in 1993, Ian and Carol repurchased part of the estate and converted a couple of greenhouses into the Jervaulx Abbey Tearoom, with daughters Gayle and Anna joining the business 15 years later. By making and selling a range of freshly made food since then, using ingredients sourced locally from producers around Yorkshire, the Burdons have not only bought a great deal of joy to their customers over the years but they have also followed in the footsteps of the monks who originally lived and worked within the abbey's walls. This book is a must-have not only for fans of the abbey and its tearoom, but for cake aficionados everywhere.

Whisky is the world's favourite spirit and is enjoying booming sales, yet too often it's shrouded in mystery, myth and complex-sounding terminology.
This authoritative book, written by three world experts, gives simple advice on how to seek out and enjoy the immense diversity of flavours and styles on offer, and how to become more adventurous.
As with any subject, the more you know, the more you can appreciate and enjoy it. This book aims to equip you with enough knowledge to be able to find your way around the whisky sections of a specialist drinks retailer and to help you feel confident choosing whisky in a bar or restaurant.

The Sunday Times Bestseller, and the biggest memoir of the year, from Britain's best loved food writer. TOAST is Nigel Slater's truly extraordinary story of a childhood remembered through food. Whether relating his mother's ritual burning of the toast, his father's dreaded Boxing Day stew or such culinary highlights of the day as Arctic Roll and Grilled Grapefruit (then considered somehting of a status symbol in Wolverhampton) this remarkable memoir vividly recreates daily life in sixties surburban England.;His mother was a chops-and-peas sort of cook, exasperated by the highs and lows of a temperamental AGA, a finicky little son and the asthma that was to prove fatal. His father was a honey-and-crumpets man who could occasionally go off 'crack' like a gun. When Nigel's widowed father takes on a housekeeper with social aspirations and a talent in the kitchen, the following years become a heartbreaking cooking contest for his father's affections. But as he slowly loses the battle, Nigel finds a new outlet for his culinary talents, and we witness the birth of what was to become a lifelong passion for food.
